Zucchini Chips

It’s Wednesday so I’m sharing some of my eats as well as a new veggie recipe that I actually enjoyed!

I was feeling a little lazy last night so I made a pit stop at Whole Foods on my way home.

I paired the chicken with one of my favorite new recipes. I am finally starting to embrace zucchini a little more. I have also been on a bread crumb kick. I have no problem adding the extra calories if it means upping the greens.

Zucchini Chips (inspired by Cooking Light)

Ingredients

1 large zucchini

1/4 cup Italian breadcrumbs

1/2 cup skim milk

1/8 tsp. sea salt

1/8 tsp. pepper

1/8 tsp. cayenne pepper

1/2 tsp. garlic powder

1/2 Tbsp. grated parmesan cheese

Directions

1. Preheat oven to 425*F

2. Slice zucchini into 1/4 inch slices

3. In one bowl combine breadcrumbs, sea salt, pepper, cayenne pepper, garlic powder, and parmesan cheese.

4. In a separate bowl, pour milk.

5. Dip zucchini slices into milk and then into breadcrumbs. Allow to rest 10-15 minutes before baking.

6. Ensure baking sheet is lightly dusted with non stick cooking spray. Bake for 25 minutes at 425*F. Flip zucchini slices over half way thru.

Chips should be crunchy on the outside and slightly tender on the inside. They are so good and quickly becoming one of my favorite ways to eat zucchini.

Of course you loved these, they sound amazing. I don’t think grabbing a roasted chicken is lazy, you got yourself to whole foods after all.

I love zucchini and I especially love zucchini chips! Having them rest for 10-15 minutes is a great idea. The time I made them the coating fell off pretty easily. I will have to let them set up a little more next time.

Crispy vegetables are the best – my grandma does something similar to eggplant, which was the only way I’d eat it for a while! Totally going to try this with the zucchini too – looks like a winner!

Zucchini chips look awesome! I roasted zucchini with squash, broccoli, and cauliflower tossed in olive oil w/ garlic, salt & pepper a few nights ago and my dad/brother loved it! Typically they aren’t huge veggie fans, but now that I got them hooked I should try out your recipe on them :)

YUM! Raw zucchini is so plain- I don’t dislike it, but it just doesn’t taste like anything. I could definitely inhale a few zucchini by making them like this :)
