Waking up I had intentions of heading over to Jenn’s and getting in on the WIAW action. I got this far.
And then I forgot to photograph the rest of my day. It completely got away from me. Photo FAIL. So instead of sharing my day of eats here’s what I made for E last night when he returned from his trip.
Caprese Quinoa and Chicken adapted from Jessica.
(yields 3 cups + chicken breast)
Ingredients
Quinoa
1 cup quinoa
3/4 cup mozzarella cheese
1 roma tomato, chopped
10 basil leaves, chopped
Chicken
1 1/4 lb chicken breast
4 oz. Annie’s Green Garlic Dressing
Directions
1. Marinade chicken in 4 oz. of Annie’s dressing for 30 minutes.
2. 20 minutes into marinade session, begin quinoa.
3. Rinse quinoa for 5 minutes, drain water.
4. Add 2 cups of water to 1 cup of quinoa. Bring to a boil. Once it has boiled, cover and reduce heat to simmer for 15 minutes.
5. After 30 minutes of marinating, cook chicken on skillet. The marinade should coat the pan so no additional oil/cooking spray is needed.
6. Once quinoa has cooked, add in mozzarella, tomatoes, and basil. Mix.
(Optional – I topped my quinoa with a basil, garlic, olive oil mixture. 7 basil leaves, 2 garlic cloves, 1/3 cup olive oil – BLEND and drizzle on top cooked quinoa.)
7. Once chicken has cooked, plate and enjoy!
I love using salad dressings for marinades. They are full of flavor but you do have to watch which one you select. Some are packed with salt so beware! The best part of this meal was that E actually like it.
E: Is this cous cous?
A: Yep eat it
A 5 minutes later: It’s actually quinoa. Do you like it?
E: Tastes like cous cous
Awesome.
Something To Talk About:
Last night I read an article that talks about a 290lb man suing White Castle because he can’t fit in the seats comfortably. You can find it –> here. He says that the fact that White Castle has not made larger seats to accommodate him violates the American’s With Disabilities Act. I personally think this lawsuit is a little ridiculous. While I can sympathize with the man, I don’t think a restaurant should be obligated to change seat sizes from what they have always been. There are just so many things wrong with a law suit like this. What do you think?

On another note, my mother buys mozz cheese that is just like that from a farmers market near her. It is the BEST cheese, I could sit and eat the whole container.

Funny about the quinoa—I do the same thing! Joe doesn’t usually fall for it, but Matthew (age 7) does sometimes.
That lawsuit is dumb. Period. I saw one a few years ago where parents were suing Nabisco because Oreos made their kid overweight.

I’ve totally pulled the couscous line with millet – I think he knew it was a fib though! That lawsuit is a total copout excuse for him being embarrassed by his size (and I’m sorry, but how ironic is it that he encountered this problem at…a burger joint??!)

AGREED. there is sooommmeeething wrong if you can’t fit in a seat.. anywhere. why pin that problem on someone else?

Oh my god that lawsuit is bloody ridiculous! That man should be ashamed. Trying to make a quick and easy buck is all that this is about! If he doesn’t like the fact that he can’t fit in the seats then maybe he should lose a little weight! I know that that probably sounds really harsh but come onnnn people!!

That lawsuit IS ridiculous- not everyone with every type of condition/special need can be accommodated- especially when it’s something such as being overweight. I mean, when I had anorexia I didn’t think of suing the fro yo shop for not having cushioned chairs to prevent bruising my bony butt…yes, I know they aren’t the same issue at hand; but it basically comes down to greed; if the seating there bothers him so much he should just take his business elsewhere!

I saw that article and wasn’t able to sympathize with that guy…I don’t think choosing to eat fatty foods is a “disability.” From what I read, it sounds like he made his own bed. And he should lie in it.

I love that you mentioned this law suit. I read about it too and it think it is just absurd. Don’t you think that by making huge seats to fit morbidly obese people is relaying the wrong message to the public? A standard seat is big enough to fit even large people. If a person is so large that they cannot fit into a chair, they are in grim health. I feel sympathy too, but instead of suing people, he should probably put that energy into getting himself healthy!

And that is a very interesting topic you brought up. I think it is a bit ridiculous too, but even though 290 is obese, there are still so many more people out there that are that much heavier. It’s hard to decide when to stop making seats larger and larger as people get bigger as well…

Yes, his size can be construed as a disability and no, I don’t think it is his fault that he is obese. It’s counterproductive to blame obese people for their condition but I don’t think that it is the responsibility of the restaurant accomodate his needs. It’s probably in the best interest of the restaurant to do so, though, if they want to retain customers. I’m sure if this man has a problem with the seating then others will as well, and would you want to go someplace to eat but you can’t even sit down? Probably not.
I think the real issues is the litigious culture that allows lawsuits like this to be acceptable.
